Papaya

80 g

Long bean (1 inch slice)

6 slices

Olive

Eggplant

1 piece

Bird Eye's Chili

3 pieces

Garlic

3 cloves

Tamarind Paste

1 ladle

½ tsp

Lime Juice

1 tbsp

Fish Sauce

Ingredients for Fermented Fish Sauce


Cooked Fermented Fish Sauce

1 bottle

Pickled Garlic Sauce

½ measuring cup

Palm Sugar

4 tbsp

Pineapple Juice

¼ measuring cup

RosDee Chicken Flavour

1 tbsp

AJI-NO-MOTO® PLUS

1 tsp

Shrimp Paste

1 tbsp

Cooking Method for fermented fish sauce

Simmer all fermented fish sauce ingredients in a pot over low heat until well blended. Turn off the heat and set aside.

 

Cooking Method for papaya salad

1. Roughly pound bird eye’s chili altogether with garlic in a mortar.

2. Add tomato and salted crab into the mortar. Season with lime juice, fish sauce, palm sugar, fermented fish sauce, tamarind paste, and AJI-NO-MOTO® PLUS. Pound everything altogether until well mixed.

3. Add sliced papaya, and crackling into the mortar. Continue mixing until all ingredients are well mixed. Taste the papaya salad. Serve the papaya salad on the plate. Papaya Salad with Fermented Fish Sauce and Crackling is ready to serve.
